Had a great vegan shopping tour this a.m. (thanks, Ben!) and said I'd share this granola recipe with the group. It's a very flexible recipe so feel free to swap out whatever ingredients you prefer or add a couple of tablespoons of flaxseed for an Omega-3 boost.

Super Easy Granola

3 cups old fashioned rolled oats (not instant, quick-cooking or steel-cut)
1/2 cup nuts (e.g. pecans, walnuts, almonds, etc.)
1/2 tsp nutmeg
3/4 tsp cinnamon
A pinch of salt
1/8 cup oil (e.g. canola, grapeseed)
1/3 cup pure maple syrup
1 cup dried fruit (e.g. raisins, apples, cranberries, etc.)


Preheat oven to 300 degrees.
In a large mixing bowl, combine the oats, nuts, nutmeg, cinnamon, and salt.
In a small mixing bowl, whisk together the oil and maple syrup. Pour the liquid mixture over the oat mixture, stirring well to coat the oats completely.
Spread the mixture out evenly on a baking sheet (use parchment paper if you like) and bake until the granola is lightly toasted (about 30 minutes) stirring carefully halfway through cooking time.
Remove from the oven and place baking sheet on wire rack to cool. Once cool, stir in the dried fruit and enjoy!
Store in airtight container.
