New dish to use up your garden veggies!

SHRIMP, CORN AND PEPPER SALAD

? C cooked fresh corn kernels
? C cooked fresh shrimp, chopped
1/3 C diced fresh peppers, assorted colors and heat levels
1 T fresh parsley, chopped
1 T fresh minced green onion
2 t lemon juice from a lemon
? t grated lemon peel from the lemon you used the juice from
? t hot sauce, or to taste
1 T mayonnaise

Place corn kernels, shrimp, pepper, parsley, green onion, lemon juice, lemon
peel and hot sauce in a medium bowl. Toss.
Mix in mayonnaise.
Season with salt and pepper. Chill.
Serve on rolls for sandwiches, or with lettuce.
