A different approach to what we know as Priorat wines?

Saó del Coster is a project founded in 2004 by Fredi Torres and his associates. After working as a DJ in Switzerland, Fredi became passionate about wines, and found in the Priorat a place to implement his vision of the world of wine. Since the very beginning, Saó del Coster has respected its lands in Gratallops, in the Priorat appellation, and has been able to express an elegant and honest vision of this region.

“When I came to the Priorat almost eight years ago, everyone asked me “what the heck is a Swiss electronic music lover ex DJ doing in a land as harsh as this one?”. It’s not easy to find an answer, but I think the most plausible explanation is that I decided to come to the Priorat because in 2001 I tasted a Clos Mogador while I was finishing my enology and viticulture studies in Geneva. And I got really excited. I felt the need to speak to the man who made it, and know how he worked in order to make such a magnetic wine. Because of my obsessive personality, one thing led to another, and I was finally able to work with René Barbier for a while. From that moment on, I knew that sooner or later, I would embark on my own personal project..."

And we will also taste his white Albariño from his project in Rias Baixas...

Since 2010, Saó del Coster has been working on a project in Galicia, producing “X de Xeito”, a 100% Albariño (Rias Baixas appellation). Fredi Torres’s Galician roots and his love for the wines of this region result in a respectful and recognizable white wine, keeping with the elegance of this unique variety.

Appealing to his D.J. past I venture to ask him to choose a music piece that could represent each of the wines and play it while we taste them...
