Kicking off the series with bold flavors and warm vibes—join me for the very first edition!
I want to share with you the depth, diversity, and soul of Mexican chilis—not by focusing on the spice, but by unlocking their flavor, aroma, and umami.
In this dinner, I’ll be showcasing five iconic chilis—guajillo, pasilla, ancho, chipotle, and habanero—each with its own personality. We’ll explore a flavor spectrum that goes far beyond heat: smoky, fruity, earthy, floral, even bittersweet.
But don’t worry—this isn’t about setting your mouth on fire.
It’s about discovering how chilis carry stories of place, time, and mood. Through different pre-Hispanic and modern techniques—I’ll extract their essence while keeping the heat tamed. The dishes will be accompanied by some cooling elements too: fresh water, creams, and textures that balance, soothe, and surprise.

The Menu
✨ Amuse Bouche
Guajillo chili–confit carrots with tahini-oregano dressing — a smoky-sweet welcome to open the palate.
đź«“ Botana
Huitlacoche & goat cheese baby quesadillas, finished with a crunchy smoked pasilla chile and walnut crumble — earthy, tangy, and irresistible.
🥣 Entrée
Black bean & ancho chili crème soup
Topped with crispy tortilla strips, avocado, parsley and fresh queso de rancho (shepherd's cheese)— rich, comforting, and layered depths.
🥩 Main
Mexican-style Arrachera (skirt steak) or a plant-based protein
Served over coriander-lime rice, topped with a chipotle adobo that’s deep, smoky, and soulful.
🍨 Dessert
Home-style Cajeta (goat’s milk caramel) ice cream – with optional habanero oil (spicy!)
Creamy, sweet, and subtly spiced — a smooth finish to a fire-kissed evening.
🌺 To drink
-Homemade fresh Jamaica (hibiscus) water with a hint of rosemary — tangy, floral, and refreshing.
