About us

Welcome fans of The Great British Baking Show! Our group was started in November 2020. It is for bakers who enjoy the Great British Bake Off/Baking Show and want to try to replicate some of their bakes.  Each month we have a Technical Challenge with a recipe chosen from the show. We have members of all levels of experience, of all ages and from all parts of the country. Our goal is to share what worked well for us and what didn't and discuss our baking experiences and results with other like-minded bakers.

We meet virtually on Zoom on Sunday evenings at 6pm Eastern Time (5pm Central Time).

The frequency of meetings changed from 1x per week to 1x per month (July 2023).

    The first major hurdle in Junior Bake Off 2026 episode 6 involves a technical challenge set by Liam Charles, requiring the bakers to produce identical lambingtons. This classic Australian sponge cake is traditionally dipped in chocolate and rolled in desiccated coconut, but for this episode, the judges have added a decorative twist. The Junior Bakers must use buttercream and sweets to transform these cakes into cute lamb characters, complete with a fleece-like texture and expressive faces.

    A successful Lamington starts with a high-quality vanilla sponge, which in this recipe includes sour cream and oil to ensure maximum moisture. The bakers are instructed to whisk together melted butter, golden caster sugar, and the sour cream before folding in the dry ingredients. Precision in the mixing stage is vital because the batter for a lamington is notably loose and liquidy.

    Assembly is the most critical stage of the process, as the bakers must navigate the messy but necessary step of chocolate coating. Each sponge must be dipped into a chocolate icing that has been heated sufficiently to avoid lumps but not so much that it becomes too thin. After the dip, the cakes are rolled in coconut to create the “fleece.” The final touch involves piping small stars of buttercream for the lamb’s face and adding marshmallows or fondant for ears.

    You can choose to decorate your Lamingtons to be Lambingtons, or stop after the coconut coating.
