Chef Christian Chan grew up surrounded by tradition, flavor, and the quiet strength of family heritage. Son of Chef Jorge W. Chan —founder of two renowned Peruvian restaurants in the U.S. and a Le Cordon Bleu graduate— Christian spent years learning side-by-side with his father, absorbing the art, the discipline, and the soul behind every dish.
But Rocoto Pescabar is more than a continuation of that legacy. It’s a personal bridge — one that connects Japan, China, the U.S., and Perú, just like Christian’s own bloodline.
It’s a restaurant born not just from recipes, but from motion, memory, and emotion. A space created to honor where we come from — and invite others into that story.
