Aged Australian Rieslings are especially revered for their long-term cellaring potential, where they transform from fresh citrus and floral notes to complex honey, nutty, and toasty characters after a decade or more. This transformation is due to their high acidity, which acts as a natural preservative. Join us to explore these three wineries and three regions with Riesling's high acid which makes it a perfect pairing with rich seafood like salmon, which the wine's citrus-palate also compliments, hence the salmon-focussed menu.
