Chinese New Year may have passed, but it’s never too late for a good celebration. Join us on April 4 for a special dinner prepared by a professional chef and shared with a small group around the table.
Our guest chef is of Malaysian Chinese origin and grew up surrounded by the vibrant food culture of Malaysia. He was later professionally trained in French cuisine and spent several years working in sushi and traditional Japanese kaiseki kitchens in Tokyo, developing a strong appreciation for seasonality, balance, and careful presentation.
For this dinner, he’ll be returning to the flavors he grew up with and preparing a menu inspired by Chinese New Year traditions, while drawing on techniques and ideas from the different kitchens he has worked in.
Expect a relaxed and social evening centered around good food, conversation, and celebrating the new year together.

Malaysian Chinese New Year prosperity salad, tossed together at the table to welcome good fortune and abundance.
Appetizers
- Chinese cabbage dumplings in a fragrant spicy broth
- Cucumber and wood ear mushroom salad with garlic, black vinegar, and sesame
Main Dishes
Pork Belly, Two Ways
- Steamed pork belly baos with pickled vegetables and fresh herbs
- Cantonese-style crispy pork belly, served with tamarind sweet chili sauce
- Hand-tossed scallion oil noodles with nori crumble
Dessert
- Mango glutinous rice dumplings with coconut foam

今回のゲストシェフは、活気あふれる食文化を持つマレーシア出身の華僑（マレーシア・チャイニーズ）です。フランス料理の修行を積んだ後、東京で数年間にわたり**「寿司」や「懐石料理」**の現場で研鑽を積んできました。日本料理特有の「旬の食材」「バランス」「繊細な盛り付け」を熟知した彼が、自らのルーツに立ち返ります。
自身の原点であるマレーシアの風味に、これまで歩んできたフレンチや和食の技法・エッセンスを融合させた、この日限りのニューイヤー・メニューをお届けします。
