Every month in 2026, The Foodie Fellowship will feature a meetup with a different regional cuisine from India or inspired by the cuisines of the Indian subcontinent. In March, we journey to the eastern state of West Bengal. Picture vibrant paddy fields and mango orchards, stretching from the misty, tea-scented peaks of Darjeeling down to the untamed, mangrove-fringed Sundarbans. It is a land of eternal autumn, steeped in the poetry and music of Rabindranath Tagore, Nazrul Islam.
West Bengali cuisine is a distinct, multi-course culinary tradition defined by the "maachh-bhaat" (fish and rice) combination, predominantly using mustard and poppy seeds, and a delicate balance of spices.
For this event, you will have a choice of starters, a "thali" main course where you can choose from several dishes, and a choice of desserts. Here are some of the dishes you can expect:
Starters platter:
๐ Non-Veg Starters
- Egg devil โ Hard-boiled egg coated in spiced minced meat or potato, crumbed and deep-fried.
- Mughlai parotha โ Stuffed fried flatbread filled with egg and minced meat, inspired by Mughal cuisine.
- Mutton chop โ Spiced minced mutton shaped into cutlets, crumb-coated and fried.
๐ฅ Veg Starters
- Koraishutor kochuri โ Deep-fried bread stuffed with spiced green pea filling.
- Posto bora โ Poppy seed fritters seasoned with onions and green chilies, shallow-fried.
- Vegetable chop โ Beetroot and mixed vegetable croquettes coated in breadcrumbs and fried.
Thali-style main course. Choose out of these (and more) dishes:
๐ Fish Main Dishes
- Fish paturi โ Fish (often hilsa or bhetki) marinated in mustard paste, wrapped in banana leaf, and steamed.
- Chingri malai curry โ Prawns cooked in a rich, mildly spiced coconut milk gravy.
๐ฅฌ Vegetarian Main Dishes (Bengali specials)
- Echorer dalna โ Raw jackfruit curry simmered with potatoes in a fragrant Bengali spice blend.
- Mochar ghanta โ Banana blossom cooked with spices and coconut into a dry, delicately flavored dish.
- Chhanar dalna โ Fresh cottage cheese dumplings cooked in a light tomato-ginger gravy.
And for after:
๐ฎ Desserts
- Malpua โ Deep-fried pancakes soaked in sugar syrup and often flavored with fennel or cardamom.
- Mishti doi โ Sweetened, caramelized yogurt set and chilled in earthen pots.
- Kalakand โ Soft, grainy milk fudge made by reducing milk and sugar.
