Founded by Jon Murray, 2024 James Beard semi-finalist Executive Chef Dung “Junior” Vo, and Managing Partner Wilson Brannock, Noko reimagines hospitality by fostering a culture guided by their ethos of “people over profit.” Recognized as OpenTable’s 2023 and 2024 Top 100 Restaurants in the U.S. and Eater’s 2023 Best New Restaurant in Nashville, Noko offers a menu that fuses traditional Asian flavors with modern techniques, featuring dishes like Wagyu Brisket with a house-made Asian spice rub and Smoked Gochujang Hot Wings.
Beyond the plate, Noko is dedicated to redefining the hospitality industry by implementing an extensive employee betterment program. This includes four-day work weeks, a yearly travel stipend, complimentary access to online therapy, paid gym/yoga memberships, health insurance, two weeks paid vacation, and more. The restaurant also donates 1% of net profits to their long-time non-profit partner, Nashville Children’s Alliance (NCA), an organization that provides services to children (at no cost) who have experienced sexual or severe physical abuse. Each year, the Noko team proudly co-hosts the "Dine to Shine” gala, contributing over $300,000 in donations for the organization’s mission of providing trauma-specialized therapy, court support, and education to children affected by the abuse."
