Thank you in advance for your understanding.** **ABC 7 News:** A taste of France in Virginia: New restaurant offers century-old Duck a la Presse The Duck a la Presse reaches all the way back to France, over a century ago. The French cuisine that originated in the early 1800s in France was once usually enjoyed by France's most elite. "Chefs would take the ducks and carve them tableside, break them down and process them through a duck press to extract the blood and juices to finish the sauce at the table.," Executive Chef Anthony DiGregorio (The Watergate Hotel, Café Boulud Palm Beach) told 7News. However, since gaining popularity over time, the duck dish has made it's way into the states and at The Simon at Reston Station in Reston, Va. "People are bringing back those old school cooking techniques and its the ability to do a table side and bring an experience to the guest," DiGregorio said. The Dry aged Duck a la Presse (for 2) is a Honey lavender glazed Jurgielewicz duck, roasted red beets, foraged mushrooms, red wine poached pear, sauce civet, according to DiGregorio. It is a multi-step process including carving, pressing tableside. The duck, which is raised at a farm in Pennsylvania, is dry-aged for about two weeks, adding flavor, texture and age onto the duck. It is then cooked in a charcoal oven. While the Duck a la Presse has made a comeback, the price for the equipment can be pretty hefty. According to Tasting Table, duck presses, depending on the metal, can range from almost $2,200 to $4,000. For a fancier option, the French maker Ercuis produces a silver-plated Duck Press Grand Hotel that could be yours for a mere €17,600 ($18,700). Two people can enjoy the traditional and historical dish for $126. **Northern Virginia Magazine:** The Simon opened September 16, unveiling a glamorous dining experience that blends global refinement with Mid-Atlantic roots. At the helm are Executive Chef Anthony DiGregorio (The Watergate Hotel, Café Boulud Palm Beach) and Executive Pastry Chef Claus Olsen (Mandarin Oriental Bangkok, The Mayfair Hotel London), who are reimagining regional cuisine with creativity and flair. Standout dishes include dry-aged duck à la presse infused with lavender from DiGregorio’s garden, Pennsylvania golden chicken with brioche stuffing, and pan-seared local rockfish with sauce vin jaune. Socrates Café meets twice a month. Though this may be considered a "philosophical" group, there are no rules as to what is discussed. Usually, the topics revolve around social concerns, morality, and the first principles of things. Prior to each meeting we vote online for the questions we will discuss. That way, we will have enough time to ruminate on them and have more in-depth conversations. If you RSVP to a meeting, you may post your question in the event comments section below. I'll send out a survey for voting a few days prior to the meetup. We discuss two questions each night. So you will get to cast two votes in the survey. When we meet, we break into smaller groups of five to seven to discuss the top two vote-getters. Each group discusses one question for around 45-50 minutes, and we then take a short break. **History** [Blacklick Woods Metro Park](https://www.metroparks.net/parks-and-trails/blacklick-woods/), established in 1949, holds the distinction of being the first Columbus Metro Park. Its creation stemmed from a post-World War II push to preserve natural areas amid rapid suburban growth. The land, originally farmland and woodlots along Blacklick Creek, was acquired by the Columbus Metropolitan Park Board through donations and purchases. Early efforts focused on basic trail development and reforestation to combat erosion. The park's name derives from the creek, which early settlers called "Black Lick" due to its dark, mineral-rich waters. By the 1950s, it served as a model for the expanding Metro Parks system. In the 1960s, Blacklick Woods expanded significantly with additional land acquisitions, reaching over 600 acres. A golf course was added in 1964, one of the first public courses in the region, designed to generate revenue for park maintenance. Native American artifacts, including arrowheads from the Adena culture, were discovered during construction, highlighting the area's prehistoric use as hunting grounds. The park introduced interpretive programs to educate visitors on local ecology and history. Flood control measures along the creek became a priority after heavy rains caused damage. These developments solidified its role as a recreational hub. The 1970s and 1980s brought environmental awareness, leading to habitat restoration projects at Blacklick Woods. Invasive species were removed, and native wildflowers were planted in the meadows. A nature center opened in 1976, featuring exhibits on wetlands and forests. The park's slate-covered bridge, a remnant of 19th-century infrastructure, was preserved as a historic feature. Birdwatching gained popularity with the addition of observation decks. Community volunteers played a key role in trail maintenance and cleanups. During the 1990s, Blacklick Woods underwent major upgrades, including paved multi-use trails for biking and hiking. The Walter A. Tucker Nature Preserve, a 53-acre old-growth forest within the park, was dedicated in 1995 to protect rare beech-maple woodlands. Blacklick Woods is a very nice park, but it is generally flat and not strenuous, so this will be one of the easier hikes that we do. **Where We'll Meet** Drive all the way to the back of the park to the parking lot that is nearest the Nature Center. There are restrooms here next to the Canopy Walk. We'll meet near these restrooms.
