Vegan Cinnamon and Banana Bread

Ingredients (1 loaf)
• 1/3 cup + 1 tablespoon almond milk
• 1 tablespoon apple cider vinegar
• Extra virgin olive oil or avocado oil spray
• 1/2 cup vegan margarine, melted
• 2 Ener-G Egg Replacer "eggs"
• 1 teaspoon vanilla extract
• 1 1/2 cups mashed banana (about 3 bananas)
• 1/2 teaspoon iodized sea salt
• 1/3 cup sucanat
• ½ cup agave syrup
• 1 teaspoon ground cinnamon
• 3/4 teaspoon baking powder
• 1 teaspoon baking soda
• 1 cup unbleached all-purpose bread flour
• 1 cup buckwheat flour

• Preheat oven to 325.
• Lightly grease (I used avocado spray) a 9 x 5 loaf pan.
• In a small bowl, whisk almond milk and vinegar and allow to settle (curdle) for about 5 minutes.
• Prepare Energ-G Egg replacers according to package instructions. (I used a blender).
• Pour the almond milk/vinegar mix and the "eggs" into a large mixing bowl.
• Add butter, vanilla extract and bananas. Mix well.
• Add salt, sucanet and cinnamon. Mix well.
• Sprinkle baking powder and baking soda into the bowl. Mix well.
• Fold in bread and buckwheat flour and mix well.
• Pour batter into the greased loaf pan.
• Bake for 50 minutes.
• Cool on a rack.
• Remove from pan and slice to serve.

Becky, the event host and organizer, Kim, sent this awesome update to attendees yesterday:

"The bake sale was a huge success! We were pretty swamped right at the beginning and had a steady stream of people until we were too cold to stand out there anymore. We sold out of mostly everything and raised a little over $400 for VegFest Colorado (taking place July 6-7).

Thank you to Lisa for helping organize the event. Amanda, Marilyn, Ali, Shannon, Christine, Scott for helping with tabling and set-up. And thank you to our generous bakers!!! Looking forward to making this an annual event."

Isn't it great?! YAY, Kim, Lisa and the all the folks who helped yesterday!

Whoopie Pies

For the Chocolate Cake:

1 2/3 cup unbleached white flour
3/4 cup sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rice milk
1/3 cup safflower oil
1 teaspoon apple cider vinegar

  • Combine dry ingredients and add in wet
  • When thoroughly mixed, place a generous teaspoon of batter into an oiled whoopie pie pan mold. Spread out until each mold is filled.
  • Bake at 350 for 10-15 minutes and test with a toothpick
    *Let cool before taking add or adding creme filling

For Creme Filling

1 1/2 cup powdered sugar
1 1/2 cup shortening
1 cup rice mellow creme

  • Mix all ingredients (they will be very sticky at first)
  • Once creamy, fill each pie with a heavy tablespoon of creme making a sandwich with the chocolate cake
  • Can be enjoyed right away!
