Darrell's Test Kitchen - Hmmm... time to attempt to make a Belgium Liege waffle. I don't have the pearl sugar, but I found a package of Chinese rock sugar the crystals the size of pearls that I hope will work. Maybe it will work. I will pair it with a poached egg and smoked bacon. Or maybe slow cooked beans with cured salt pork? Stay tuned. Well, after researching the Belgium Liege waffles more, I see it will take almost 2 hours to make the 1st waffle... I'm hungry now! I go 180 degrees in another direction! I decided to make chicken pozole!!! I've never seen it, tasted it much less made it before. BUT, I had a HUGE cany of hominy, chicken and all the ingredients to make it, so away we go! The many recipes I looked at used pretty much the same ingredients, so I didn't follow any specific recipe, but I can say it is delicious! Recipe posted in the forum click here.
