What types of food do you most enjoy? Does your cultural or ethnic/background influence your enjoyment of food and cooking?

I enjoy a wide variety of foods, but tend to cook Italian, Cajun, Indian and American. I love braising, especially beef and pork shanks. Experimenting with herbs and spices is high on my list of things I enjoy doing.
