Kombucha, a fermented tea, is thought to have originated in the Far East, probably China, and has been consumed there for at least 2000 years. The first recorded use of kombucha comes from China in 221 BC during the Tsin Dynasty. During this time, it was known as "The Tea of Immortality."Kombucha Regarded as a health tonic in countries world wide for more than 2 thousand years; Kombucha shows up in records such as The Bible, was noted by numerous Chinese Dynasties and Czars of Russia, was purported to have been taken to battle by Vikings and Japanese Warriors alike, and has been said to reverse aging, and heal ailments and maladies galore. Kombucha is produced by placing a "Mother" SCOBY (Symbiotic Culture Of Bacteria and Yeast) into fresh, room-temperature Green or Black tea Sweetened with Sugar, and with a small amount of previously brewed Kombucha-Tea. The Process takes 5-8 days, though some enthusiasts insist the product is best at 30 days...a bit strong for my tastes. When the K- Tea is finished, the result is a slightly tart-tangy bubbly beverage that is full of vitamins, including: C, B1, B2, B6, and B12, as well as Pro-biotic Organisms, Organic Acids, Hydroxy Acids, Essential Amino Acids, and Minerals, and is amazingly refreshing. There will also be a new "Baby" SCOBY formed on the top of the liquid in the shape of the brewing container. The culture, when cared for properly, will regenerate continuously and multiply readily, giving its owner a lifetime of loyal service. Extra SCOBYs are often given away to friends and family as a gesture of kindness. Kombucha has become quite popular of late with the Raw Food, Fermented Food, Vegetarian, Vegan and Hollywood crowds. Because of the fermentation, Kombucha may contain a small amount of alcohol (0.5-1.5%). Most experts recommend starting out slowly when new to drinking Kombucha. Two to four ounces per day at first and slowly building to a higher intake. Extra water should also be consumed, as the tea does have a detoxifying effect. Some people may experience light detox symptoms at first...so pay attention to the way you feel. The safe daily maximum is a matter of debate, but most references agree that, depending on your individual circumstances, 16 - 24 ounces should be safe. The best idea is to listen to your body...some days I want more than others, and some days none at all. Kombucha, besides being a delicious and refreshing dietary addition, has topical applications. It is wonderful applied externally to the skin (just don't get it in the eyes), or hair and scalp as a conditioning treatment.
