Well the holidays juste ended so I had been cooking a lot of food for family events. I recently made my famous roast turkey. I put herb butter under the skin, and then baste it with a combination of clarified butter and Medera wine. I roast it upside down so that all the fat drips into the breast, and then I flip it for the last 20 mins. every piece of skin it crispy, and the whole bird is moist flavorful and perfect.
