Early Dinner: Sweetbread and homemade sausage wrapped in caul fat

I would like to invite 16 people to my home for dinner. I am going to experiement with sweetbreads and make my own sausage. They will be served in different courses. I wanted to list them because not everyone loves those things. As usual the meal will be at least five courses including dessert. Even though there will be assertive meat elements vegetables will still be present.

Dinner will cost $40. If you would like to participate in the wine program that is an additional $20. Thomas is very thoughtful in selecting the wines.

    Here is what we ate:

    Arrival course: roasted asparagus sformato with crisp pancetta chips and fennel fronds.

    Second course: sourdough flatbread with radicchio, speck, ricotta, and asiago cheese.

    Third course: homemade sausage wrapped in caul fat, pan fried then served over puréed canelini beans finished with a fresh fennel agrodolci.

    Fourth course: sautéed sweetbreads with mixed organic baby greens tossed with a agrodolci vinaigrette and a sweet roasted garlic and lemon zest aioli.

    Final course: whipped Maine goat cheese with organic apricots soaked in rum and orange zest served with pan roasted hazelnuts and hazelnut pizzelle

    Another fabulous dinner with delicious wine pairings. Loved the barberas and the vin santo. The best sweetbreads I ever had.....Loved the pickled fennel. Loved the first course...almost like an asparagus soufflé. The pancetta chip was an inspired touch. Thank you for another wonderful meal.
