Zucchini 'Rounds
Pack 1 zucchini, 1 ripe avocado, a bit of whole dried dulse and a lime.
In the moment, slice the zucchini into 'rounds about 1" thick and top with a wedge of avocado, some whole dried dulse and a 'squish' of lime. Yum!!!

Summer Pizzas
We love Caroline Dupont's recipe for Live Buckwheat Pizza Crusts that we make ahead of time and store in a sealed container in the fridge for weeks although they never last that long. This recipe can be found on our site under More/Files/Nov 20th Potluck - Caroline Dupont's Recipes. In the moment, we top the pizza crusts with a bit of home-made raw marinara sauce (Doug McNish has some terrific marinara recipes in his newly released book entitled 'Eat Raw Eat Well' but basically it's just blended soaked sun-dried tomatoes, fresh tomatoes, a touch of a good oil high in Omega 3's such as Sequel's Vega or Udo's 3-6-9, some fresh garlic and some fresh Italian herbs for seasoning. On top of that we add wedges of tomato, fresh basil leaves and wedges of a ripe avocado. Yum!

Summer Salad
Lately, we been topping the tender young greens from our garden with a few walnuts (good for Omega 3's), a few dried cranberries and apricots, tomato wedges, garlic scapes (we have 92 of them in our fridge at the moment!) and wedges of a ripe avocado. The avocado makes the tender greens moist enough that we're not using a dressing. Quick, easy and super-nutritious!
