This recipe is actually from Appetite for Reduction by vegan cookbook goddess Isa Chandra Moskowitz. It's on page 82 if you have a copy.

1 cup bulgur
1 1/3 cup water
1 tsp olive oil
1 small onion, diced
4 cloves garlic, minced
1lb eggplant, 1/2 inch dice
salt and pepper
3 plum tomatoes, chopped
2 tsp ground cumin
1/2 cup fresh mint, chopped

Boil the water and pour over the bulgur. Cover with a tight-fitting lid and steam for 40 minutes.

Saute the onion in oil for about 5 mins, then add garlic and saute 1 more minute. Add the eggplant and salt and pepper. Cover and cook for 15 mins, stirring occasionally - the eggplant should break down and release liquid and go all mushy. Add tomatoes and cumin and cook for another 10 mins. Add bulgur and mix thoroughly, then fold in mint.

Spray an 8inch baking pan with cooking spray and press the mix into it. Bake at 350 degrees for 25 mins.
