Mash brew day again, time to get christmas brews on to add to our current stock (30 beer batches and 5 wines) See pic of our first two christmas 2012 beers on maturation phase and the ALT which will get a few months to mature for the all-Ireland competition in March.
Current keg conditioned stock includes Dusseldorf ALT, Fresh barley stout, IPA matured 7 months in fridge, Spalt pilsner (pale ALT), and Xtra Mild will be drinking in a week or two. We have circa 25 types of beer in bottles, red ruby ale, smokey ale, weiss, various bitters, MILD, Hersbruker Munich, pale ales, belgian strong dark ale and more. And dont forget Kellie's 5 Wines! Definatly worth a try.

The aim of this brew day:
All welcome to relax, chat, eat good food and taste good wine and beer. The idea is to learn how to progress brewing knowledge. Experts welcome to offer advice and beginners welcome to learn the ropes!
Another brew day. This time its a novelty christmas ale (all ideas welcome). Rich spicy red ale hopefully great with rich food. Christmas spirit induced into this brew using a cool fermented weiss yeast to add clove, raisins and mixed spice to add christmas cake, and a little more alcohol to add warmt. Some spicy and citrusy hops will improve the christmasy feel. We may even throw in a drop of brandy!!
Full mash takes 6 hours from start to finish. tasting and good food in between brewing tasks also some bottling to be done.
