Presenters Tony Quintana and Victor Flores will share from their experiences creating plant-based versions of traditional foods. Learn recipes, techniques, ideas, and inspiration for enjoying traditional Latinx foods without the animal based ingredients they are often made with.

๐“๐จ๐ง๐ฒ ๐๐ฎ๐ข๐ง๐ญ๐š๐ง๐š is the Plant-Based Eating Program Manager for Animal Protection New Mexico and co-hosts the Teach Me How To Vegan podcast with is wife Mickey. He has worked in the field of Health Education for over 10 years, and has managed health promotion programs focusing on a wide variety of topics including nutrition, fitness, diabetes, obesity, and HIV. He is also an experienced fitness instructor and has led fitness programs in a variety of settings. Tony earned his masterโ€™s degree in Health Education from the University of New Mexico and holds three fitness certifications from the American Council on Exercise. Tony has been vegetarian since 2007, has been vegan since 2016 (along with his wife and two children), and enjoys sharing information on the many benefits of a plant-based diet.

๐•๐ข๐œ๐ญ๐จ๐ซ ๐…๐ฅ๐จ๐ซ๐ž๐ฌ is the Online & Community Outreach Specialist for Vegan Outreach. Victor oversees online and community outreach, and also does outreach to communities in New Mexico and some areas of Texas such as El Paso. Victor, his partner Karla, and their children are a vegan family of six and they are very active in their region. Together, theyโ€™ve organized numerous vegan events such as free community meals, food competitions, college outreach and have worked with and convinced local businesses to add vegan items to their menus, among other various activities. Victor supports his familyโ€™s projects and is co founder of Camp V, an all vegan summer camp for kids, La Raza Vegana, a Facebook page dedicated to vegan topics in Spanish, the Plant Powered Pop-up Market, and most recently, his familyโ€™s newest endeavor, Root 66 vegan food truck in Albuquerque, New Mexico. Born in Dimmitt, Texas to an immigrant family and raised on a ranch, Victor uses his background to become more relatable and establish relationships to further veganism to new audiences.
