This group is open to any person at any level of expertise who wants to learn more about and celebrate all aspects of artisan baking. Topics covered include but are not limited to quick breads (cookies, biscuits, pies, muffins, etc.), yeast breads (bagels, pizza, baguettes, sourdough), to all forms of pastry (croissants, puff pastry, danish, etc.). Events will be held at both private residences and local businesses. I am starting this group to meet likeminded passionate people, so share my skills, and to learn from others. I teach culinary at the high school level, but have a home filled with commercial equipment from mixers, to belt sheeters, to a 56" wood-fired pizza oven. Specific topics will depend on the interests of the group but we will be flexible enough to go outside of the strict definition of baking to include tempered chocolates, hand made pasta, etc. Looking forward to hearing from you!
This will be a basic, entry-level pizza class/demonstration. I will be showing my favorite technique which involves the use of a food processor (Cuisinart), but I will also give instruction regarding other options (mixer, hand, etc). We will also discuss options for sauces and some far out topping combinations (Hawaiian style, bbq, arugula/prosciutto, etc.) Experience is not required but some experience with yeast breads will be useful. Follow-on classes will include Advanced Pizza Making (using a wood-fired oven), bagels, and baguette baking. The class fee includes all ingredients, but if you'd like to try something extra fancy, feel free to bring it along. Also, feel free to bring your favorite beverage!
