UXCHCH: AI, value propositions, and futures thinking in meat inspection

Building a successful AI product isn’t just about developing the technology – it's about earning buy-in from regulators, workers, and stakeholders, and creating something people trust, adopt, and are willing to change how they work for.
In this talk, Matt Scott shares the journey of introducing AI to assist with meat inspection, to support NZ's second largest export and second-most highly regulated industry. The technical feasibility has been proven, and the user interface is coming next. The system will eventually guide defect trimmers in meat processing plants with displays and inputs. To date, the focus of the project has been on aligning stakeholders around a shared vision of the future, and on validating the value proposition - beyond just automating what we’ve always done.
Matt will discuss:
- Futures Thinking for stakeholder engagement: Opening up the space to innovate and gaining stakeholder buy-in, in a complex regulatory environment
- Validating value propositions: Insights from customer discovery interviews that opened up new opportunities to add value
- Preparing for UX: Making sure our UX will meet real user needs in highly variable industrial environments
This session is for designers, researchers and product thinkers curious about how AI can drive real-world change, and how UX can play a role.

Bio:
Mat Scott is Inspection Innovation Manager at AsureQuality, leading the development and adoption of AI-powered solutions for automated carcass inspection in New Zealand’s meat industry - a sector that’s both highly regulated and deeply human-centric. With a background blending commercial creativity and product delivery, Matt focuses on validating value propositions, navigating complex regulatory and workforce environments, and preparing for UX / UI in industrial settings. His work bridges the gap between technical feasibility and real-world adoption, showing how AI can drive meaningful change even before the first user interface is built.Agenda
