Hello rainbow foodies :-)

This group is for anyone who wants to learn how to make fresh hand-made pasta and other traditional Italian dishes taught by an authentic Italian cook and pasta maker.
It's for anyone that loves cooking and has a passion for good quality food.

The aim of the workshop is to spend a lovely time together, sharing ideas and cooking tips while having a glass of wine and enjoying a delicious meal.
The workshop is also an opportunity to learn new skills, acquire more knowledge about Italian culture, socialise with like-minded people and ultimately to feel confident in the kitchen when inviting friends and family over for a meal and be proud of something you created with your own hands 🙂

The workshops will take place digitally or as a social event in a safe and friendly apartment in Central London.

There will be a maximum number of 12 people attending each event in order to keep the atmosphere intimate and be able to offer the possibility to everyone to learn and socialise without pressure.

It is an occasion to meet gay men (single and couples) however everyone else is welcome to join in.

Online "Aprons Only" cooking class: Polenta with sausage ragu, a winter classic!

The hot and steamy "Aprons Only" theme is back, this time with a classic winter dish to keep you warm, polenta with a sausage ragu....you couldn't get a more appropriate ingredient for the occasion 🤣😁

Polenta is a typical dish of northern Italy but is also widespread in the rest of country. Generally it is prepared with classic corn flour, the yellow flour to be clear that gives the polenta its traditional yellow color. However, each region has a different way of preparing and seasoning it. One of the most popular ways to prepare polenta is to dress it with pork ribs sauce, pork belly or pork sausage ragu.
In this online cooking class I will show you my family's recipe.
I am sure you make this dish a few more times before the end of the cold season :-)
This is an opportunity to learn new cooking skills, socialise with like-minded people and ultimately to feel confident with our body and be proud of something we created with our own hands 🙂

Please note this online event is for gay men only.

INGREDIENTS & SHOPPING LIST for 2 people:

2 fresh sausages (preferably from an Italian deli)
1 shallot or small onion
50ml of white wine
250ml of tomato passata
1 can of white beans
handful of basil leaves
500ml of water
125g of yellow corn flour for quick cooking polenta (if you can find the brand called Valsugana is ideal)
1 tablespoon of extra virgin olive oil
25g of grated Parmesan cheese, plus a few flakes to decorate
1 tablespoon of extra virgin olive oil
Freshly ground black pepper
1 tsp of butter
Chilli flakes if you like
Handful of fresh parsley

UTENSILS Required:

1 big pot for the polenta
1 frying pan or casserole for the sauce
1 whisk
1 wooden spatula
Knife and fork
1 chopping board

Online cooking class: Handmade Pappardelle with pancetta and pea cream

Pappardella is a type of handmade pasta, very similar to Tagliatelle, however slightly wider. Although pappardella is very common in central and northern Italy, it is in Tuscan cuisine that this pasta finds its greatest use, dressed with different sauces especially based on game meat.
In fact, very famous are the pappardelle with wild boar ragu' and the pappardelle with hare ragu'.
As it is quite difficult to find those type of meat, I am going to introduce you to another delicious and popular sauce made by 2 ingredients that are often combined together: peas and pancetta.
Creamy and velvety this sauce will concur any heart!

INGREDIENTS for 2 people:

2 eggs
200g of flour, preferably a combination of 00 and durum wheat flour
150g of green peas
150g of pancetta
120g of mascarpone cheese
grated Parmesan cheese
1 onion
1 garlic clove
half a glass of white wine
salt & black pepper
extra virgin olive oil

UTENSILS REQUIRED:
Chopping board
1 frying pan
1 big pot
1 baking tray
knife, fork and spatula
Rolling pin
Cling film

Baked Crespelle: The Italian version of the French crepes

When people talk about crepes they always think about France.
Indeed, they are one of the emblems of the French cuisine.
However, not many people knows but also Italians have their own version, called Crespelle, which are normally filled with cheese and other ingredients and then baked in the oven for a crispy final bite.

It's a delicious and tasty dish, perfect for a Sunday lunch and also great alternative to baked pasta. It is much easier than you expect to make it.

There is also plenty of room for your imagination to play with different fillings from ricotta and spinach, to ham and mushrooms, or even speck and gorgonzola!
Today's recipe is a quick but effective combination of ingredients.
I will explain you 2 different options.
This recipe is also a "smart dish" to be prepared in advance and then cooked when needed; conveniently it can be prepared, stored in the freezer, and, just before the guests arrive, cooked in the oven and your first course will be served on the table with a few minutes!
I'm sure your guests will appreciate it and they will ask for more :-)

INGREDIENTS & SHOPPING LIST for 2 people:

FOR THE BATTER:
100gr plain flour
2 eggs
170 ml milk
15gr melted butter, plus an extra spoon to cook
A pinch of salt

FOR THE BESCIAMELLA:
500gr of milk
50gr of flour
50gr of butter
Nutmeg
Thyme

FOR THE FILLING:
200gr roasted ham or Mortadella
100gr scamorza, provolone or caciocavallo cheese (mozzarella is also ok but will release more liquids while cooking making the dish a bit sloppy, a dried cheese is better)
20gr of grated pistachios (this is not a MUST)
50gr of grated parmesan cheese
Black Pepper and salt

OR as an alternative filling

200gr of finely chopped mushrooms
1 garlic clove
1 ricotta (approx 250gr)
a handful of parsley
salt and black pepper
Extra virgin Olive oil

UTENSILS REQUIRED:

1 frying pan 24cm diameter
1 whisk
1 wooden spatula
1 small pot
1 bowl
Knife and fork
1 chopping board

Online cooking class: Pasta alla Trapanese with aubergines and swordfish

A simple and genuine Sicilian recipe, with all the most beautiful flavours of the Mediterranean.
Every single bite is a real pleasure as the combination of the ingredients it's just sublime.

INGREDIENTS & SHOPPING LIST for 2 people:

250gr of dried Casarecce pasta (you can also use any other type of short pasta like penne, rigatoni, fusilli o paccheri)
1 slice of swordfish, approx 200gr (as alternative it can be substituted with fresh tuna or white fish)
1 eggplant
150g of cherry tomatoes
1 clove of garlic
a handful of mint leaves
1 tbsp of capers
salt, black pepper and chilli
extra virgin olive oil
half a glass of white wine
a handful of flaked almonds
1 unwaxed lemon

UTENSILS Required:

1 big pot for to boil the pasta
1 frying pan or casserole
1 chopping board
1 spatula
knife
