Fresh Local Ingredients, Updated Family Recipes and more love than you could imagine drive our cuisine. What started as a humble pop up in our founders home has grown from catering company, to cafe, to bakery in a short 5 years under the Direction of David Trotta and Gina Cassesse. We look forward to inviting you into our home and/or visiting yours.

Pancibus Chalsa:
Created in a Jersey City kitchen not much larger than a walk in closet, Pancibus is a concept that is a function of curiosity, creativity and most importantly, change. After spending one too many late nights in the lab modifying my roasted tomatillo salsa, I realized that it wasn’t lacking flavor, but a purpose that transcended above the token “Salsa & Chips”. Chutney, being a multipurpose meal compliment in all regions of Indian cuisine, already shared several of the common ingredients found in the salsa, and once infused with 7 different peppers and 20 + fresh ingredients, Chalsa ™ was born.
