What Spring aromas can you detect in the wine you are tasting? In wine tastings, wine is often smelled before being drunk in order to identify the wide array of fruit, earthy, leathery, floral, herbal, mineral, and woody flavours present which are derived from aroma notes sensed by the olfactory bulb. The term aroma generally refers to a pleasant smell unique to the grape variety as opposed to odour which refers to an unpleasant smell or possible wine fault. As a wine ages, chemical reactions create new smells that are known as a wine's bouquet.
