Tapas is one of Carl's favorite food experiences. A "tapa" (Spanish) is a small plate. "Tapas" means small plates, plural. Come enjoy some extremely flavorful tapas as well as Spanish Rioja wine. Ole!
We have TWO special guests that will call in after dinner: cardiologist Dr. Nadir Ali, and the inimitable Dave Feldman! The topic is saturated fats, cholesterol, and heart disease.
Happy hour (4 PM to 5 PM) is when everyone meets, shares a beverage (wine, seltzer, diet soda, or water) and some yummy charcuterie and cheese.
At 5 PM, Carl will demonstrate how to make the dishes which will be served at 6 PM.
The Tapas menu includes deep-fried chorizo chicken skin dumplings, chorizo sausage stuffed inside chicken skins, sealed with meat glue (transglutaminase), and deep fried until golden crispy brown.
We will also serve albóndigas en salsa or tapas meatballs:
Also on the menu are two of Carl's favorites from a local tapas restaurant Dev's: Garlic shrimp (chunks of garlic with shrimp sauteed in butter) and flank steak with Barcelona sauce (sliced and served with a sauce made from blue cheese and brandy).
Finally, we will serve Carl's lamb with tomatoes, olives, and garlic.
At 7 PM, we'll talk to Dr. Nadir Ali and Dave Feldman with plenty of time for Q&A.
