Ketoky Fried Chicken Meetups have been THE most popular, so why not do it again in the dog days of summer?
This time, I'm going to sous vide the chicken (thighs and legs) in the spice mix for 3 hours at 155F before deep frying for only 3 minutes! This way, you'll taste the BEST fried chicken you've ever had fresh and hot.
From 4 to 5 PM is happy hour where everyone meets, shares a beverage (wine, seltzer, diet soda, or water), artisanal cheeses and charcuterie.
At 5 PM I'll demonstrate how to make the dishes, which will be served at 6 PM.
First of all, there's the fried chicken, deep fried in beef tallow with a crispy pork rind coating and a special blend of herbs and spices! This recipe will be updated to show the new technique:
The mashed potatoes and gravy will go WAY beyond the bland spud flakes you get at the red-and white box place. It's a mash made from roasted cauliflower and garlic. The gravy is made from chicken bone broth. Plenty of that peppery flavor that you know so well.
What would this experience be without a cold crispy coleslaw? I've faithfully matched the flavor profile of the original. This was THE hit food at the last event. It was more popular than the chicken, which was delectable!
I might be able to convince Carrie Brown to make the cole slaw she made for the Ketofest VIP party in July. That was the shiz!!
Of course we'll have biscuits, hot and fresh out of the oven.
For dessert, we're having keto chocolate parfaits with "graham cracker" crumbs for crust.
Besides being the best fried chicken dinner you've ever had, it won't raise your blood sugar. That's right. You can lose weight and reverse diabetes by eating fried chicken!!
