Laurie Courage is a Certified Food For Life Educator with the Physicians Committee for Responsible Medicine (PCRM) and founder of Encouraging Greens Inc. She offers group nutrition/cooking classes that help people on the brink of a health crisis to restore their health and enjoy an energetic life for years to come by helping them understand what and how to eat.
Laurie writes, "Research has shown that certain diet patterns have a major effect in helping people diagnosed with cancer to live longer, healthier lives. Numerous studies have shown that a diet built from plant foods offers the most cancer fighting protection of any diet plan. Reviews by the American Institute for Cancer Research shows that as much as 50 percent of cancer risk may be related to diet."
The PCRM Food for Life: Cancer Project classes offer a unique opportunity to:
- Acquire knowledge about the link between diet and cancer
- Experience the benefits of plant-based nutrition
- Learn the practical cooking skills needed to help you on your journey to better health
In this Cancer Project class, attendees learn all of this while enjoying cooking demonstrations, tasting delicious, healthful dishes and taking home useful class materials and recipes, all in a supportive group setting. This 3 hour program combines all the nutrition education and 5+ recipes from two classes: "Introduction to Foods that Fight Cancer" and "Cancer Fighting Compounds and Immune Boosting Foods." This class is limited to 8 participants.

The Food for Life: Cancer Project is a community-based nutrition education program of the Physicians Committee for Responsible Medicine (PCRM). PCRM is a nonprofit organization of doctors and laypersons working together for compassionate and effective medical practice, research, and health promotion.

To manage food and materials purchases, we can provide refunds up to seven (7) days prior to the beginning of the class. Thanks for your understanding. However, if you wish to transfer your enrollment to a friend, please contact Laurie and she will confirm your request up to 24 hours in advance.
