this email seems to have gone out to the whole group because you replied to an email notification that was sent from the Meetup site and not one that was sent directly from me. I'm a little concerned that it may have caused offence to any members that may have signed up for event with +1's or 2's.
You've made a very valid point and I totally understand how frustrating it must be to find that a particular event full and that some of the people attending aren't members but unfortunately the site doesn't give me the facility to only let members sign up for events before +1's are allowed to signup. Numbers for events are always very fluid, I sometimes spend weeks arranging a particular event only for people to drop out at the last minute so I have to make sure all events are fully subscribed then i'll have a good chance at getting a 85% turn out. 
What I try to do with all of the events that there is a huge amount of interest in; is hold more that one of the same event so everyone gets a chance to participate. As it says on the site, this will be the case with the knife skills class. We will be holding three events in total because there is so much interest and the dates for all three will be announced on Monday. I have to test the water with one event to begin with so I can get a full scope of the numbers. I don't want to book a chef and pay him/her before we have a true idea of how many people will come and take a guess based on past history of how many people will actually turn up. It's a bit of a science!
As far as the dinner parties are concerned, my hands will always be a little bit tied as we're obviously restricted by the venue thats offered. 
Over the last couple of years we've had a number of members that first attend an event as a plus one before deciding that we were the group for them and joining so I don't feel like I can restrict people from bringing a friend, also it makes the events a lot more interesting when you have a regular flow of new blood. The musician from the Vegan dinner party was Sally's + one and Conny, the GP from the dinner party started list as Sylvio (her husbands) +1 and I think that you'll agree that they certainly added a bit more colour to the event.
Sorry that I can't be more helpful. I do work incredibly hard and commit a lot of my time and money to catering for everyones needs and I apologise if I've fallen short.
