### Degustazione & Wines – Tortél Dóls di Colorno

This time we invite you to an evening where history takes its place on the plate – with a dish so unique that it exists only in one corner of Parma, the village of Colorno. We’re talking about Tortél Dóls di Colorno – sweet-and-tangy handmade pasta parcels filled with grape must and rare fruits such as cocomero da mostarda, mela cotogna and pere nobili.
Tortél Dóls originated in Colorno, where the dish is said to have been served at the court of Marie Louise of Austria, Duchess of Parma and Napoleon’s second wife. It was brought to the table during grand occasions – often at Christmas or major family gatherings – and came to represent the gastronomic elegance of the former duchy.
Today, the recipe is safeguarded by a local association in Colorno – and on this evening you’ll taste it exactly as it is served there: with melted butter, Parmigiano Reggiano, and a touch of tomato paste.
The evening is hosted by Lorenzo, from Colorno, who will share the story behind the dish, the origins of its ingredients, and how the tradition has survived from royal kitchens to today’s family tables.
