While sitting here in a remote village in Papua New Guinea, in 30 plus degree heat, I feel it is time for a nice spicy Thai dinner. It has been a while since we last went to the fabulous Nickies Thai restaurant. On a cold winter's night, what could be more pleasurable than a spicy Thai dinner.
