A Siphon coffee flight hosted by Jaime van Schyndel, founder of Barismo Coffee Roasters hosted at 364 Broadway Cambridge MA. Siphon brewing is a method he fell in love with nearly 20 years ago and has been demoing and promoting since the early days of specialty coffee’s manual brewing revival.
The siphon is one of coffee’s most visually captivating brew methods, but what has kept Jaime returning to it for two decades is its incredible expressiveness. Coffee brews in a stable immersion environment balanced at a controlled indirect temperature by the heated steam chamber below. Gentle, intentional agitation at key moments, combined with a coffee-to-water ratio approaching espresso territory, creates cups with remarkable structure, aromatics, and clarity.
Guests will experience a guided flight of three coffees brewed on siphon, exploring how the method expresses sweetness, texture, fruit, and aromatics across different coffees and roast profiles.
