Andrew Bennett is an autistic self-advocate who combines his international cooking fascination with spreading awareness and acceptance worldwide, and was specially invited to travel with the Global Autism Project to Nairobi, Kenya in March 2023. All proceeds from this class will be used to support the work Andrew and his teammates will be conducting to improve autism awareness infrastructure in Kenya. - INGREDIENTS
KACHUMBARI (PICO DE GALLO) (pictured)
· ½ medium red onion (5-6 oz)
· 1 lb tomatoes (Campari, or otherwise garden fresh)
· 1 medium avocado
· 1 serrano or ½ jalapeño chili
· 1 tsp salt
· ½ lime, juiced (approx 1 Tbsp juice)
· 1 tbsp fresh cilantro
RICE
· 1 cup basmati rice, Indian preferred
· 1 1/2 cups water
· 1 tbsp coconut oil, ghee, or butter
SUKUMA WIKI (GREENS AND CREAM)
· 1 pound kale, shredded
· 2 tbsp coconut oil, ghee, or butter
· 1 large red onion (about 12 oz), finely diced
· Salt to taste
· 1 cup heavy cream

Skillet for the greens
Juicer for limes
Something in which to submerge and melt a bottle of coconut oil, if using
Cutting boards and knives
Smaller bowl to soak onions
Rice cooker or small saucepan to cook rice
