The Cathedral of Texas Barbecue

If Snow's is a pilgrimage, Louie Mueller Barbecue is a history lesson served on butcher paper.

Opened in 1949, Louie Mueller Barbecue is one of the most revered institutions in Texas barbecue. Texas Monthly first praised the restaurant in 1973, calling it "the best all-around barbecue dinner in Texas," and more than fifty years later, the restaurant continues to set the standard for traditional Central Texas barbecue.

Today, third-generation pitmaster Wayne Mueller carries on a family legacy that helped shape Texas barbecue as we know it. In fact, one of the restaurant's original pitmasters was among the first to wrap brisket in butcher paper, a now-standard technique used throughout the barbecue world.

Inside the historic building, smoke-darkened walls tell the story of generations spent tending fires and perfecting barbecue. Guests can enjoy exceptional brisket, massive beef ribs, and expertly crafted sausage while experiencing a restaurant that many consider the platonic ideal of Texas barbecue. Texas Monthly summed it up best: "If there's anywhere that represents the platonic ideal of Texas barbecue, this is it."

Why We're Going:
Every serious barbecue fan should experience one of the most influential barbecue restaurants in Texas history at least once.
