"Fun backstory too, as we were building out the Coop we had a small plates menu in mind and full bar offering. During construction, we’d often find ourselves just down the street at Holy Smoke BBQ & Grill. We had loved Jeff Ray for a long time but this construction time period really expanded our relationship with him. As we learned that the location there was not going to be renewing his lease and Jeff was feeling pushed into early retirement due to rising operation costs and needing to find a new home - we asked if he wanted to join us! His goal: 'I just want to smoke meat and make people happy for as long as I can keep it going!' With that, we brought the infamous Jeff Ray over to the Coop, purchased all of his equipment and integrated the famous Jeff Ray BBQ into our small plates menu concept."
