Featured Wines
To accompany the menu, Paul has curated a tasting journey through some of Spain’s most celebrated wine regions and styles. The experience begins with a refreshing Cava, Spain’s traditional sparkling wine, offering bright acidity and lively bubbles that pair well with tapas, seafood, and cured meats. A crisp Albariño from Galicia brings citrus, stone fruit, and mineral notes that complement shrimp, octopus, and other coastal dishes. A fruit-forward Garnacha delivers ripe red berry flavors and soft spice, pairing beautifully with chorizo, meatballs, and savory tapas. The tasting concludes with two Tempranillos from Rioja, showcasing the grape’s elegance and versatility, with layered red fruit, subtle oak, and earthy depth that pair perfectly with richer meats, cheeses, and traditional Spanish fare.
- Segura Viudas Brut Cava – Crisp and refreshing with citrus, green apple, and fine bubbles.
