INGREDIENTS:

300 g of Carnaroli rice, (other type ok)
50 g of dried porcini mushrooms, (other type ok)
1 tablespoon of grated Parmesan cheese,
½ onion,
1 litre of vegetable broth,
2 tablespoons of extra virgin olive oil,
a piece of butter
a little sachet of saffron to add on top (not mandatory)
Have a rich red wine to go with your risotto!
