Climate Change and Increased Toxins in Food
by Mei-Ling Shek, EGG VolunteerAn emerging concern about the adverse impacts of climate change is our increased exposure to toxins through food.
Rice is a staple food for half the global population. It has been shown that higher temperatures and carbon dioxide levels lead to an increase in arsenic uptake in paddy rice, owing to changes in soil bio-geo-chemistry. Arsenic is a carcinogen. At the current rate of rice consumption, the corresponding increase in arsenic levels would add 19.3 million cancer cases in China alone.
Studies have also shown that climate change amplifies marine food web bioaccumulation of methyl mercury and PCB (polychlorinated biphenyls).
A warmer and more humid climate also increases the risk of human exposure to mycotoxins produced by fungi found in certain food, crops and feeds.
Presenter: Mei-Ling Shek has degrees in chemistry and applied physics, and has worked as a scientist and engineer in national laboratories as well as startup companies (telecom and solar). She has also taught courses in physics, introductory nanotechnology, and energy & environment.
