Special Topics on Sustainability and Health
selected by Eric Lemons

This week we will be seeing an assortment of short interesting videos on topics from food safety to the roles of fungus in nature to capturing the power of the ocean.

Are shrimp safe to eat?
In past meetings we have discussed the impact of animal agriculture on climate change and the impact of animal food products on our health. A frequent question was whether shellfish, especially shrimp, were healthy to eat. We will be listening to two short videos by Dr. Michael Greger that summarize peer reviewed published research studies into how safe shrimp is to eat – specifically what is the level of pollutants and what is the level of antibiotic residue in grocery store shrimp.

The role and impact of fungi in agriculture, our health, food safety, and climate change is frequently overlooked. Soil fungi is critical for plant uptake of nutrients in the soil and so has a major impact on crop agriculture as well as our forests that capture CO2 and release oxygen. Healthy soil sequesters carbon and soil fungi is critical to this process. However, some fungi attack crops and can devastate yield as well as drive farmers to use fungicides.

Burning fossil fuels to generate energy is the largest contributor to climate change. We talk a lot about solar energy and wind energy, but very little attention has been given to the energy generated by the ocean via tides and waves. At the same time that we are slowly gaining ground on switching to renewable energy we are seeing a looming demand for more electricity to power AI data centers and crypto currency mining data centers. How will we ever generate enough electricity to be able to turn off our fossil fuel burning power plants? If we could capture the energy of the ocean we could make major strides.
