Spend the weekend exploring Glen Canyon. Drive up after work Friday afternoon and spend two nights at the Lees Ferry campground, hiking, fishing, and boating (if you have one).
Fishing above and below Paria River is very different. Above: only artificial lures with barb-less hooks. You can't keep anything above 14 inches. A boat would be very handy! I've caught 6 or more in that area with Rapala minnow lures (including when we hiked down the Ropes Trail). I just clamped down the barbs with some pliers. Below Praia River: live bait, lures, and now size limit. I've caught fish Cathedral Wash and Jackass Canyon from shore with lures and worms. I’m thinking of taking my 12 foot kayak. I use light weight pole, line, hook, and maybe a slip sinker with a smaller clip on sinker.
I’m not sure about mountain bikes.
Spencer Trail to the top is a great hike (steep!). You can walk over the mesa there and see the other side of the river. There are hikes down Cathedral Wash, maybe up Paria a ways (permit??), there may be other washes to hike in too.
