Beef Noodle Soup at Mian

I’ve tried a lot of beef noodle soup in Hawaii, and this is the closest I’ve found to what I’ve had in Taiwan. The chef and owner are definitely from China, but taste-wise, their beef noodle soup reminds me very much of the versions I’ve had in Taiwan.
The food of China and Taiwan is closely related, of course, but there’s a certain depth of flavor to Taiwanese beef noodle soup that I don’t usually find in versions from China. This one has it. I like it as much as just about any beef noodle soup I’ve had in Taiwan, and to me, it tastes very authentic.
It’s a little spicy, and the beef is tender and flavorful. I’ve tried other dishes here, and they’re good, but I always come back for the beef noodle soup. For me, it’s the one standout dish at this restaurant and the reason I keep returning.
