Season 9 - Henry's Chocolate Kardemummabullar

Our bake for Sunday, May 19 is Henry's Chocolate Kardemummabullar, a Swedish bread flavored with cardamom spice.

Henry appeared in Series 10 (aired in 2019). While he was eliminated at the end of Episode 8, Henry garnered praise from the judges in Episode 7 (Festivals) which showcased his Chocolate Kardemummabullar recipe.

This recipe is listed as being "Challenging." It yields 12 buns, a bake time of 15 minutes at 400 deg F, chocolate crème patissiere filling, and two separate proofing times. If you have not used pearl sugar, this recipe may be the time to place an order for it. Only 50g are used here, but the leftover pearl sugar can easily be used in future bakes.
