After having a successful EASY recipe in June, it was unanimous to select another EASY rating recipe for July. I've been wanting to make scones for the longest time. I've tasted many delicious varieties of scones, but have never attempted baking them.
It was tough to choose between a Mary Berry Scone recipe, and the one from Paul Hollywood. For July's Bake, we're going to do Paul Hollywood's, because his recipe calls for Bread Flour vs All Purpose Flour.
For July's Bake, we're going back to the very first Series of GBBO, Episode 2-Biscuits, where the Technical Challenge was to make Paul Hollywood's Scones in 1 hour.
tips for making scones...
- make sure there are no big lumps of butter when making bread crumbs with the flour
- only put egg wash on the very top of the scone,
try not to egg wash the sides, if it goes down the sides too much it creates a glue and prevents it from rising up - using the 15 minute cooking rule, scones should need no more than 15 minutes of baking
Be sure to share your scone pictures before the start of our July 27 gathering.
In this recipe, we'll learn about a technique called "chaffing." This is where you will be folding and turning the dough mixture to incorporate the last of the 50 grams of flour and add air.
