For the signature, the bakers were tasked with putting their own spin on Cornwall's national dish: the pasty, in two hours.
A traditional Cornish pasty is a D-shaped savory pastry from Cornwall, England, filled with diced beef, potato, swede (turnip), and onion, seasoned and encased in a robust, crimped pastry crust. Historically, the crimped edge served as a handle to avoid arsenic from miners' dirty hands, while the robust pastry protected the filling during transport and eating. Since 2011, the Cornish Pasty has Protected Geographical Indication (PGI) status, meaning only pasties made to a specific recipe in Cornwall can legally be called "Cornish Pasty"
Our October recipe will be a non-traditional Cornish Pasty using contestant Hermine's Moroccan Tagine Pasties recipe.
From now until October 12, go shopping for your ingredients, plan your bake to fit into your schedule, post your pictures, and join the group at 6PM Eastern Time to discuss our successes on this Cornwall portable lunch.
At the end of the meeting, we can also discuss which recipe to make for the November "bake." In the meantime, I will be reviewing all of the GBBO holiday-related recipes.
