"Hainanese chicken rice" is a dish of poached chicken and seasoned rice, served with chilli sauce and usually with cucumber garnishes. It was developed by Chinese immigrants throughout Southeast Asia, including Singapore (a national dish), Malaysia, Vietnam (cơm gà Hải Nam), and Thailand, where it is called khao man gai (ข้าวมันไก่, "chicken fat rice")."

Traditionally, the Thai variant used local free-range chickens, resulting in a leaner and tastier texture. Khao man gai is served with a garnish of cucumbers and fresh coriander, along with a bowl of nam sup, a clear chicken broth which often contains sliced daikon. The accompanying sauce is most often made with tauchu (also known as yellow soybean paste), thick soy sauce, chilli, ginger, garlic and vinegar.
