100% Whole-grain bread (& butter!) at The King's Roost

In the 3-hour class, Roe, the owner of The King's Roost, will take you step by step through his method of making 100% whole wheat bread without the use of any refined flour. In this hands-on class you will select from various organic and/or California-grown whole wheat berries, mill the flour, mix the dough, add the starter, feed the starter, and bake a loaf. We will sample a couple of freshly baked loaves in class (bring your favorite cheese or jam if you want!). You will go home with your dough to bake at home, a proofing basket to carry it in and some starter to continue baking with. What Level is this class?
My goal in this class is to provide a baseline level of knowledge for wholemeal bread baking in it's most basic/primitive form (although we do use some neat modern equipment!). It is an ideal class for the beginner and no previous bread baking experience is needed. However, even experienced bakers have enjoyed the class: besides learning how to bake 100% whole wheat, we also cover a few things not usually covered in typical baking classes such as grain selection/blending, grain milling equipment and natural starters. If you bake a lot of bread but want to start milling your own grains, transition to using a natural starter, or want to use less or no bread flour, this class is for you.
PARKING
There will be plenty of free parking in the parking lot. There is a small driveway on Sunset on the south side of the building (immediately next to Echo Bark pet store). Enter the store right from the parking lot as there is no door on the sunset side of the building.
