During this class, we'll create this elegant, layered Mediterranean dish featuring roasted red bell peppers, toasted eggplant, crispy breadcrumbs, melted mozzarella, fresh herbs, garlic, scallions, capers, optional anchovies, and a generous spread of my homemade pesto.
