The Philippines' unofficial national dish is Adobo, a savory and tangy dish made from meat or seafood that is marinated and slow-cooked in a sauce of vinegar, soy sauce, garlic, and other seasonings. While the name "adobo" comes from the Spanish word for marinade, the cooking process and ingredients predate Spanish colonization and were used as a method for preserving food in the Philippines' hot climate.
