Nigeria at Independence: A Legacy of Resilience
Nigeria, the giant of Africa, carries a history defined by struggle, resilience, and triumph. At its heart lies Independence Day, celebrated every October 1st — the moment the nation broke free from British colonial rule and embraced self-determination.

The Road to Freedom
Before colonialism, Nigeria was a tapestry of kingdoms and cultures with rich traditions of governance. The British gradually imposed control, but by the mid-20th century, inspired by global decolonization, Nigerian leaders like Nnamdi Azikiwe, Obafemi Awolowo, and Ahmadu Bello spearheaded the demand for self-rule. Their vision culminated on October 1, 1960, when the Union Jack was lowered and the Green-White-Green flag rose — a new dawn for Africa’s most populous nation.

Each year, Independence Day rekindles that spirit of freedom. Parades, cultural displays, music, and reflection transform Nigeria into a living canvas of patriotism and diversity. Nigerian food reflects the country’s ethnic diversity, with over 250 ethnic groups, and varies by region, ingredients, and traditions. Nigerian cuisine is known for bold flavors, hearty meals, and colorful presentation, often combining spices, palm oil, vegetables, grains, and proteins.

Starter
Beans/Ewa served with seasonal salad
(Nigerian mashed beans served with a spicy, pepper-rich sauce) (V)

Suya beef served with fried onions and tomatoes (one of Nigeria’s most iconic street foods, a spicy, smoky grilled meat that’s hugely popular across West Africa) The beef is smoked in a blend of ground peanuts, chili powder, ginger, garlic, paprika, and other spices.

Moi Moi served with seasonal salad
Is a classic Nigerian dish made from steamed blended beans. It’s nutritious, savoury. (V)

Mains
Jollof Rice with plantain beef, chicken of fish, with side salad
One of West Africa’s most famous and beloved dishes! It’s a one-pot rice dish cooked in a rich, spiced tomato and pepper sauce, full of flavour and colour. Nigerians (and Ghanaians 👀) both claim the crown for the best version, but Nigeria’s Party Jollof is legendary.

Egusi or efo Stew with Amala or pounded yam with beef, fish or chicken

Egusi is one of Nigeria’s most popular and beloved soups, Ground egusi (melon) seeds, Palm oil, Blended peppers, tomatoes, and onions (for the base)
Efo is a rich, flavourful Yoruba-style vegetable stew often cooked with spinach in the UK

Amala is a staple food in Yoruba cuisine and one of Nigeria’s most popular “swallows."
It’s a dark brown smooth, stretchy dough made from yam flour (elubo), cassava flour, or unripe plantain flour, and it’s called a “swallow” because you typically swallow it with soup rather than chew it much.
Pounded Yam is one of Nigeria’s most iconic staples and a favourite “swallow” across many regions.
Made from yam flour or boiled yam that is pounded or mashed until it becomes smooth, stretchy, and dough-like. Known for its soft, elastic texture, which makes it perfect for scooping up soups.
